I made crepes this morning, which is usually easier when I have my pan (left it at home) that doesn’t allow the batter to stick and burn. My friend lent me a pan which my crepes kept sticking to, so luckily I found another pan. This is a great, easy-to-make breakfast treat, and it is perfect for a day with no morning class or a weekend.
Here is the recipe:
~1 cup of water
1 cup of soy (or other) milk
1/4 cup of canola oil
1 cup of all-purpose flower
2 teaspoons vanilla extract (usually I just pour a little in from the bottle)
1 teaspoon lemon juice (just squeeze the lemon for a couple of seconds)
1/2 teaspoon salt (I forgot this today)
add fruit or other topping (I added peanut butter with bananas and kiwi)
