Coconut Couscous with Kale
I felt like experimenting with couscous tonight, so I prepared it with coconut milk and kale. I am snacking on it as I type, and it’s delicious.
In a pot, heat one can of coconut milk.
Add kale to bubbling coconut milk (I added about 2 handfuls)
Add over a cup of couscous immediately after the kale.
Cook for 8-10 minutes with a lid (I put a pan on top of the pot). Stir occasionally.
Add salt, pepper, and other spices to your liking and ENJOY
